This frosty green apple cookie butter oat smoothie has tons of protein, fiber, B-vitamins and potassium. It’s a delicious and nutritious way topower your morning!

I am totally obsessed with smoothies right now, and, being that this is my second cookie butter recipe post this week, I guess you could also say I’m cookie butter crazy.

Santa brought me a new blender for Christmas! I had gotten into a daily smoothie breakfast-habit over the summer, but it had been seriously waning over the last few months. My beautiful new kitchen appliance prompted a complete countertop makeover/rearrange, as well as a renewed passion for blending a whole day’s worth of fruits and vegetables into a cold, frothy, post-workout pick-me-up.

Usually, I follow a kind of more-is-better approach when it comes to smoothies. I like to pack as many ingredients in there as I can. Kale, frozen berries,Greek yogurt,whole oranges (with the peel; lots of vitamins!), oats, pineapple, coconut water, apples, carrots, ginger, bananas, pomegranate juice, you name it! If it’s loaded with nutrition, it’s going in.

It may look like utter sludge, but I love it.

But after developing my recent granola recipe, I just couldn’t quit cookie butter.

Acookie butter smoothie had to happen.

If you’re going to make yourself a cookie butter smoothie, you want it to taste like cookie butter. That is a no-brainer, right? So this recipe maybe doesn’t get you quite ALL of the nutritious things of a green smoothie, but, it does boast nearly 12 grams of protein, along with lots of good fiber from the apples and oats, and potassium and B vitamins from the banana.And the cinnamon is great for preventing blood sugar spikes. Not to mentionthe whole thing also happens to be knock your sporty-socks off delish.

My mom was just giving me an education on chia seeds, turns out they are soooo super good for you. I’ll be picking up a bag on my next grocery run, and I think they’d be fab in this recipe!

Ingredients

  • 1/3 cup (78.86 ml) almond milk
  • 1/4 cup (50 g) plain Greek yogurt, (I used fat-free)
  • 1/4 cup (20.25 g) old fashioned oats
  • 2 tablespoons cookie butter, (I used creamy Biscoff Spread)
  • 1/8 teaspoon ground cinnamon
  • 1/2 green apple,, cored (I used granny smith, with skin still on)
  • 1/2 frozen banana
  • 1 cup (14 g) ice cubes

Instructions

  • Place all the ingredients in a blender and whiz 'til smooth.

Calories: 396kcal, Carbohydrates: 58g, Protein: 11g, Fat: 15g, Saturated Fat: 3g, Cholesterol: 3mg, Sodium: 130mg, Potassium: 452mg, Fiber: 6g, Sugar: 28g, Vitamin C: 9mg, Calcium: 166mg, Iron: 1mg

    I’ve never heard of cookie butter ? Is it healthy? (great pictures/site)

      Thanks Anna! Sometimes cookie butter goes by other names such as Biscoff spread or speculoos. It’s not as healthy as nut butter probably- but almond butter or sunflower seed butter would work really well in this too!

    Allie,
    I posted about your smoothie yesterday. My kids and I are spending part of the spring break up at my parents, and I wanted an easy recipe to post while up here, plus I’d been wanting to try it. It’s SO good! I’m really picky about my smoothie flavors and for whatever reason don’t enjoy ones that are super fruity. This recipe is really great.

    I need to get into smoothies in the winter. This looks so so delicious and healthy. You had me at cookie butter to be honest but the apples just threw me in sold 😉

      They’re so great after a workout, when you’re kinda hot and sweaty and thirsty… If not for that I’d probably have trouble drinking something so cold in the winter. Also cookie butter helps!

    This looks incredible! I have never had cookie butter. I know, I know. Maybe I should? lol! Is it gluten free?

    I also LOVE chia seeds. Been eating them for years. I love them in my oatmeal, cookies, smoothies. Superfood all the way! 🙂

      Cookie butter is insanely good but unfortunately it’s not gluten free 🙁 It’s made from a graham cracker-like cookie, so it has wheat for sure. But you could certainly substitute peanut butter, almond butter, or sunflower seed butter; that would be fabulous! <3

        Hi Liv! I think peanut butter would be fabulous in this smoothie! I love peanut butter and apples for an afternoon snack so it makes perfect sense. But if you’ve never had cookie butter, omg girl, you gotta try it! It’s the same kind of texture as peanut butter only it tastes like graham crackers. They make it from crushed up cookies. It’s soooo good! The brand I buy is called Biscoff spread and it’s sold right on the same shelf with peanut butter.
