This Thanksgiving Eggs Benedict recipe repurposes your holiday meal leftovers into a delicious version of eggs benedict. A stuffing waffle is topped with leftover sliced turkey breast and topped with a perfectly poached egg. A drizzle of gravy and a side of cranberry sauce completes this meal perfect for breakfast or dinner!

Remembering Thanksgiving Leftovers!

When I was a young girl, I remember looking forward to the Thanksgiving leftovers. I was a huge fan of my mom's homemade fruit salad with heavy whipped cream, her dinner rolls, and crockpot stuffing. As a matter of fact, I would be ready to have a snack that same evening!

I remember slicing in half a homemade dinner roll, spreading on a nice layer of real butter, and placing some leftover roasted turkey inside for a turkey sandwich. We would enjoy leftovers for a few days, then we would start to get sick of them. So to add variety to our leftovers, we made this Thanksgiving Eggs Benedict recipe!

Making a non traditional Eggs Benedict Recipe

A traditional eggs benedict is made with a toasted english muffin, slices of canadian bacon, poached egg, and hollandaise sauce. A delicious meal of course, but a non-traditional eggs benedict recipe can be tasty and fun!

With both of my children being huge fans of eggs and my youngest son being the perfect egg poacher, we decided to try making a Thanksgiving Eggs Benedict with our dinner leftovers. It was a delicious and fun event as we all stood around watching the eggs circle in the saucepan with the magic white wrapping around the egg as it cooked!

Make the Stuffing Waffles

I know I am not the only one around who loves the crispy bits in homemade stuffing. Well, those crispy bits get even better when you use your waffle iron. Those crispy bits encase the entire stuffing waffle!

Before we make the waffles, we turn the heat on the skillet full of water to get it hot enough to start poaching eggs. Then, we proceed to make the stuffing waffles. Once the waffle is made, we will layer a few slices of turkey breast over top of it.

We set the stuffing waffle with turkey slices aside and proceed to poach the eggs. To get the perfect poached egg, you want heat water in a deep skillet over medium high heat. You should have at least 4 inches of water in the skillet.

Swirl the water with a spoon a few times and then gently place the egg in a small bowl and slowly add to the boiling water. The water will continue to swirl and will wrap the egg white around the yolk. Watch the video to see the magic happen when poaching an egg!

Using a slotted spoon, gently remove the egg from the poaching water and lay it over top of the turkey and stuffing waffle. Pour some hot turkey gravy over top of the egg and sprinkle with some parsley and salt and pepper if desired. We love to serve cranberry sauce on the side for the full holiday plate effect!

Variations to this Thanksgiving Eggs Benedict Recipe

There are some different things you can do to change this recipe up some. Below are a few ideas!

  • Add an egg to leftover sweet potatoes and substitute the potatoes for the stuffing when making waffles.
  • Use Hollandaise Sauce instead of gravy to cover the egg.
  • Place a couple spoonfuls of cranberry sauce over top of the waffle before laying down the turkey slices.

Tips for making Thanksgiving Eggs Benedict

  • Make sure your waffle iron is hot and leave the stuffing in there until it is browned and crispy. There is no need to spray the waffle iron more than once.
  • Depending on the texture of your stuffing, it is likely you will need to add an egg to help keep the stuffing from falling apart. Homemade stuffing may not require it depending on how moist it is.
  • Be sure to stir the hot water with a ladle before adding the poached egg to it. Then slowly drop the egg in the center of the pan. Quick and jerky movements will cause the egg white to separate

Ingredients

For the Stuffing Waffles

  • 1-⅓ cup leftover stuffing
  • 1 large egg optional

For the Benedict

  • 4 large eggs
  • 12 oz leftover Turkey
  • 1 cup whole berry cranberry sauce
  • ½ cup turkey gravy

Instructions

  • Preheat waffle iron.

  • In a large mixing bowl, mix together 1 large egg egg and 1-⅓ cup leftover stuffing. If your stuffing already sticks together well, you may leave the egg out.

  • Place ⅓ cup of stuffing mixture onto hot waffle iron. Close lid and cook until waffle is browned and crispy.

  • While waffles are cooking, add water to a large skillet (add enough water to be at least 4 inches deep). Bring water to a boil.

  • To poach the eggs, give the water a stir several times in a clockwise direction.

  • Gently add the egg to the boiling water and let the water swirl and cook around the egg, about 1 minute. Egg will be opaque and white will have surrounded the egg. Repeat with remaining eggs.

  • Place turkey on stuffing waffle while egg is cooking.

  • Gently remove egg from poaching water and carefully place it over top of the turkey and stuffing waffle.

  • Spoon 2 tablespoons of turkey gravy over top of egg and garnish with parsley. Season with salt and pepper if desired.

  • Serve with ¼ cup cranberry sauce on the side.
